Wip Wednesday 10_13

What could it be?  Hehe, I’m super excited about this one! But I need new needles to arrive in the mail so I can finish it. 😉

In the mean time, I must finish the purple scarf I am making for my father as soon as possible since his birthday is next week. With my fellowship, I have less time to finish it. But one week should be more than enough. 😀

My Fave 5 Minute Strawberry Smoothie

I love smoothies and strawberry anything! Who cares if it’s  Fall and it is getting cold outside.  Here’s my favorite smoothie recipe. (I’m sorry for the less than stellar picture, I was in a rush to drink this!)



Servings: 2

8 strawberries sliced in half
1/2 cup skim milk
1/2 cup plain yogurt (I like to use vanilla yogurt)
3 tablespoons white sugar
2 teaspoons vanilla extract
6 cubes ice

Directions: Place in blender and blend until smooth and enjoy! Serves 2.

Traveling Thursdays: San Franciso

Today’s “Traveling Thursdays” destination is San Francisco. I absolutely love San Francisco and can’t wait to go back. It’s my second favorite city in America! The food, the hills, cable cars, pretty houses, diversity, all attract me to this place I truly left my heart in San Francisco, so much so I wouldn’t mind living there! Shhh, don’t tell NYC.

Apple & Cheddar Quesadillas

Lately, I’ve been obsessed with making quesadillas for a quick snack!  They are absolutely delicious and can be made in about 5 minutes!  You can pretty much make them with anything, but here’s how I like mine:


Shredded Cheddar Cheese

Apple Slices



Instructions: Sprinkle some cheddar cheese  (about two tablespoons) on half a tortilla, add some apple slices, sprinkle more cheese on top, and fold the tortilla in half.  I use a sandwich press and just press it until the cheese is melted.  If you don’t own a sandwich press you can just use a skillet but make sure to use some cooking spray if you are afraid it will stick.  Make sure to turn the folded quesadilla so that it cooks evenly on each side.

Note: You can replace cheddar cheese with any other cheese you like and/or use ham, or some left over chicken, whatever you like instead of apples for a savory snack and add guacamole or sour cream as a side.  I love to make these with smoked turkey ham for a savory snack or lunch!
